Under the skilled guidance of bar manager Shelley Tai and head bartender Sim Sze Wei, Nutmeg & Clove passionately reimagines Singaporean and Asian flavors, resulting in innovative cocktails. They ingeniously incorporate familiar local ingredients, crafting drinks that eloquently narrate the stories of Singapore’s background.
Their latest menu, “Singaporean Identities,” is a testament to the bar’s national pride, celebrating the city-state’s luminaries through 12 inventive concoctions. The “For The Love of Kueh” drink, inspired by Malcolm Lee of the esteemed restaurant Candlenut, impeccably balances cognac with a smoky Mexican chile-infused distillate, complemented by pandan, coconut, candlenut orgeat, and rice milk. Meet Sago House, born during the 2020 lockdown in Singapore, a true labor of love by three industry veterans: Desiree Jane Silva (ex-28 HongKong Street and EC Proof), Jay Gray, and Abhishek C George (Spiffy Dapper, among other venues).
With passion and dedication, they meticulously crafted the interior using 80% upcycled materials, giving the place a unique and sustainable vibe. Although the pandemic caused some delays in the opening, they didn’t let it stop them, and even during those challenging times, they managed to serve delightful bottled cocktails to their customers.

After much thoughtful planning and determination, Analogue Initiative fearlessly opened its doors during the pandemic. Vijay Mudaliar, the mastermind behind the acclaimed Native bar, brings his unwavering principles of sustainability and innovation to this exciting venture.
From the moment you step in, you’ll notice how sustainability takes center stage. The magnificent aquamarine bar counter, a true work of art, was 3D printed using a staggering 1,600 kilograms of recycled plastic bottles. Even the coasters are thoughtfully crafted from unique recycled materials. But it doesn’t stop there!
The tabletops themselves are made from an extraordinary self-growing substance called Mycelium, derived from a variety of fungus.
This commitment to sustainability extends to the drinks and food menus too. While they’ve expanded their range of spirits to include international selections, the team has ingeniously incorporated ingredients that have a lesser impact on the environment. Imagine carob and chicory replacing chocolate in the delectable ‘Faux Espresso’ Martini. ‘Future foods’ like spirulina and cactus take center stage in some of their most popular cocktails.
